Not Yo Granny’s Bread Pudding

Fall is in the air! These cooler temps make me hungry for warm, fruity breakfast dishes to start my day off right. Today, I made one of my favorites — Berry Bread Pudding. It is quick, healthy, vegan/vegetarian, and has the added perk of being kid friendly! I hope you enjoy as much as we have :-).



Berry Bread Pudding

2 slices of whole grain bread, toasted

1/2 C almond or soy milk

1/2 tsp vanilla (or almond extract is good too!)

1 C fresh or frozen berries (I like a mix)

1 TB honey or agave

1 tsp jam (any variety!)

  • Toss the toasted bread in a saucepan and add milk and vanilla. Cook on medium heat until warmed through.
  • Add berries, honey and jam. Heat for about 10 minutes, stirring occasionally.


*This recipe makes enough for me and my toddler to split, or just me if I’m feeling particularly hungry. I recommend doubling the recipe for two adults.
