Thursday Things I Love: Splash Pads, Paddle Boats, and Fresh Herbs

This week was full of essential summer activities and I’ve loved it. It’s been hot. We’ve been near the water a ton. I took an awesome yoga class. I’ve made and eaten a ton of great food. We’ve spent some great time together as a family. And I even cleaned my house. Wait. That’s a lie. My house is a totally disaster. But the rest of the things are true! Who needs a clean house when you have a summer bucket list of actives that you are scrambling to accomplish before everyone goes back to school? Not this girl. Cleaning can wait. Take a look at some of the things I loved from the week:

I took the kids (all three of them!) to our local splash pad and let me tell you, it was so fun! I loved watching and listening to my boys run around and giggle.

At the splash pad, Bea and I sat along the edge near a low sprinkler. I got such a kick out of watching her in that water! She focused on it with such intense concentration and would kick and splash in the water and try to grab it. Oh, and her bikini. I died!

I mean. I just can’t even tell you. I love them so much and I find them so stinkin adorable.

I’ve really enjoyed making refrigerator pickles this summer with whatever is in my garden. This week I par-boiled some of my green beans and pickled them and – wowzers – were they good!

I got to see my Uncle Sam this week! You can see that he and Bea have a special bond ;-).

The life jacket was bigger than Bea, and it sure made paddling difficult, but we still had fun.

After paddle boating and a picnic, our two families went for a little hike. How cute is Theo and his friend M? I love this picture of them. When did they get so big???

Theo and I went on a bike ride the other day to explore his new school and to scope out the bike rack situation. I couldn’t help but notice that he seemed extra tall, extra grown up, and extra little-boyish. Also, I just love how much he loves to ride his bike.

My husband built the kids (and us) an outdoor play space/outdoor living room and it’s awesome. We broke it in this week with a picnic and the kids have spent time out there reading, coloring, and playing. I’m so in love with it and I look forward to all the fun times and memories that will be made in the space! You can read all about it and see more photos, here.

I LOVE SUMMER FOOD!!!! I love growing my own veggies. I love stopping at local fruit and veggie stands for all the things I didn’t grow. I love the fresh herbs that are growing right out on my patio. And I love that everything is as bright as it is delicious.

Until this week, I forgot one of my favorite summer cast iron skillet recipes. You quarter red skinned potatoes, toss them in EVOO, sea salt, and fresh herbs, and bake them for 45 minutes in a 450° oven for 45 minutes or until tender. They are delicious. I made them one night and then tossed the leftovers in my salad the next day. YUM!
