Yesterday was an early dismissal from school for Theodore and the beginning of Christmas break. THIS IS VERY EXCITING! I’m so happy that the band is back together again. Theo is home. Mike is home. Oliver, Beatrice and I are home (we always are). It feels good.
We kicked off Christmas break by getting the kids ready for bed super early so we could eat our mac n cheese on the sofa and watch….Home Alone!
I made homemade hot cocoas for everyone. There was a lot of laughing from Theo, which made Mike and I laugh. We all enjoyed breaking the rules a bit by eating in front of the tv. It was cozy. It was exactly what we all needed.
Stovetop Hot Cocoa
I love this recipe! It’s full of lots of good things and free of bad ones. I served mine with candy canes because I knew the boys would like that. It would also be great with cinnamon or a dash of chili powder (maybe even a red hot or two???). I don’t like chocolate, so my mug was almost entirely coffee, with a splash of cocoa for flavor, just to be a joiner. 😉 Enjoy
1/2 C honey (could also use sugar, but they honey is more healthful and tastes great!)
1/4 C cocoa powder
1/3 C water
4 C favorite milk
3 TBS coconut oil
dash of salt
1 tsp of vanilla (optional)
Mix everything except milk together in a saucepan and bring to a boil, stirring for one minute. Slowly add in milk until heated through, but do not boil.
This made enough for all four of us (well, three and a quarter since mine was mostly coffee). The rest I poured into a pitcher and will reheat later!
